BRAISED RED CABBAGE
Chef Rich Rosendale inspired this red cabbage recipe by Chef Peter Timmins, one of his mentors. Unlike any other red cabbage recipe, it has more of a marmalade consistency than a braised cabbage. He used this recipe for the CMC Exam, and it complements well with wild game, fall, and winter dishes.
