Cheesy Cast-Iron Yeast Rolls
If you're one of the lucky ones, you have fond memories of freshly baked bread from your childhood. Hearkening back to family tradition, Rich shares this treasured family recipe for cheesy yeast rolls cooked in a cast-iron skillet. Feel free to use your favorite cheese in this recipe—sharp cheddar, asiago or mozzarella are some of our favorites. And most of all, enjoy! These rolls are best served warm (with lots of butter, of course).

Yeast Rolls
In a small bowl, combine yeast, warm water, and 1 tablespoon of sugar. Set aside and allow it to prove/ferment for 20 minutes while you prepare the dry ingredients.
In a separate bowl, sift together the flour, salt, and the remaining 5 tablespoons of sugar.
After yeast mixture has proved for 20 minutes, add the oil and stir to combine. Add the liquid mixture to the dry ingredients and combine until a dough forms. Knead the dough for 15 minutes.
Slowly incorporate the cheese into the dough. Rest the dough for about 20 minutes for proofing.
Next, punch down the dough and portion into 3-ounce dough balls.
Place the dough balls in a greased cast-iron skillet and allow to prove again for 15 minutes. Grate additional Parmesan cheese as desired over the top before baking.
Bake at 350 degrees F for about 30 minutes or until golden brown. Melt the butter over the warm rolls and serve.
