Lobster Terrine

This terrine is one of the most recognizable dishes in culinary competitions. Chef Rosendale created it during his first international cooking competition, Expogast, in Luxembourg in 2002, where he received a very rare perfect score in his first-ever international commentary competition. It was presented on a platter of lobster and salmon together.
