Sous Vide Pig Face

One of our favorite questions to ask in our kitchens is: "Will it Sous Vide?" Turns out, even the most adventurous ingredients cook up phenomenally by way of sous vide, even—you guessed it—pig face! Any chef worth their salt knows the importance of using every part of the animal, and in this recipe, we're definitely using a part of the animal you might not see in an everyday kitchen!

It turns out, pig face is one of the most delicious sous vide preparations, as the fat renders perfectly, adding sumptuous flavor to the meat. Combined with the butter, fresh herbs and spices, garlic and shallot in this recipe, the flavor of the meat is off the charts.
