Steak with Old School A.P. Rub and Blistered Cherry Tomatoes
Bring the steak up to room temp for at least 30 minutes.
Season both sides of the steak with the Old School A.P. Rub. Drizzle 1 Tablespoon of oil over the steak and rub it into both sides.
Heat a large cast iron or stainless steel skillet over high heat. Add 2 Tablespoons of oil, and once the oil is hot and smoking, add the steak to the pan. Brown the steak for 4-5 minutes, then flip it over and brown the other side for 2-4 minutes, or until the desired doneness (for a medium rare steak the internal temperature should be 125°F, 135-140°F for medium, and 155°F for well done when tested with a thermometer). In the last minute of cooking, add the butter, garlic, and rosemary to the pan. Transfer the steak out of the pan, and allow it to rest for 10 minutes.
While the steak is resting, add the tomatoes to the hot pan, reduce the heat to medium, and cook the tomatoes until blistered, about 4-5 minutes. Add the vinegar and cook for 1 additional minute. Season with salt.
Slice the rested steak against the grain and serve topped with the blistered tomatoes and the pan sauce.
