Super Carrot

This carrot recipe has been talked about for several years; people refer to it as a great example of simplicity elevated to the level of the Bocuse d’Or. We take one ingredient—a humble carrot—and create something that is fascinating, delicious and relentlessly creative. It was used during the 2013 Bocuse d’Or in Lyon, France but the origins of this concept were first used during the 2012 Team USA tryouts when Chef Rosendale created a version of it using beets and apples.
