Ahi is the most popular fish to eat in Hawaii, and rightfully so. Not only do Hawaiians have a treasured ancient history with this fish, but it is just plain delicious, especially when it's fresh right from the shores of the Pacific. Rosendale Collective had the opportunity to visit the Honolulu Fish Auction Tour, the only fresh tuna auction in the U.S., where we learned about all things ahi, from the different species of ahi, to flavor profiles and preparation methods, to the rich Hawaiian history associated with this culturally beloved fish.
