Beef Tenderloin Pave

This is perhaps one of the most recognizable competition pieces in the Rosendale repertoire. The beef pave is what Rich used during the 2013 Bocuse d’Or in Lyon, France. Its striking appearance is due much in part by the uncommon shape of the beef tenderloin. There are many elements of this recipe that can be taken and applied in your own kitchen without making the entire recipe.
