BRAISED RED CABBAGE

This red cabbage recipe was inspired by my mentor, Peter Timmins. It's unlike any other red cabbage recipe and has more of a marmalade consistency than a braised cabbage. I used this recipe for the CMC Exam and it complements well with wild game, fall, and winter dishes.
