We like to make compound butters with a combination of ingredients, ranging from spices to fresh herbs. This fennel pollen compound butter is a great way to add flavor to your sous vide meat. We like to distribute sliced medallions of the flavored butter into sous vide bags after the butter has been rolled into cylindrical logs. It is a great way to keep flavored butter on hand for easy use and works particularly well for sous vide cooking.
