Fish Brine

Brine is a high-concentration solution of salt in water. In different contexts, brine may refer to salt solutions ranging from 3% up to 25%. Brine has various uses: it is common in food processing, cooking, preserving, or seasoning food. It can also be applied to vegetables, cheeses, and fruits in a process known as pickling. Meat and fish are typically steeped in brine for shorter periods of time as a form of marination to enhance its tenderness, flavor, and/or shelf life.
