Shopping Notes for Your Ribs:
The extra tender farmland ribs are very tender and are in a solution of water, salt, and phosphate which retains much of its moisture.
You don't want them sitting in the solution too long at the grocery store after they are thawed. Try to get some that have just been put out in the showcase. Feel them and make sure they are not too limp. They will begin to over brine if they are thawed out and not used right away. You can also keep them frozen until you need them vs. letting them sit in the saline solution for too long.
