Marinade for Smoked Pork Loin

When it comes to flavor combinations, fewer are more classic than pork and apple. Reminiscent of fall days and childhood, the sweet meatiness of the pork and the tartness of the apple are truly a flavor match if there ever was one. These nostalgic flavors are joined together and elevated several degrees in this recipe, where we marinate the pork loin in a honey apple cider marinade. We like to grill the pork loin on applewood to up the apple quotient and add an unmistakably sweet, aromatic flavor to the meat. This is a timeless marinade recipe that will be enjoyed by all.

1 tablespoon honey
2 cups apple cider
1 garlic clove, chopped
2 shallots, chopped
1/2 teaspoon ginger, chopped
1/2 teaspoon black peppercorn, cracked
2 tablespoons cilantro, chopped
1 teaspoon whole grain mustard
2 teaspoons salt

Step

In a bowl large enough to hold both the marinade and the pork loin, whisk together marinade ingredients until fully combined.

Add pork loin of choice and marinate for 4–6 hours prior to cooking.

We recommend seasoning the pork with salt and cracked black pepper, then grilling it over applewood. We also recommend brushing the pork with a nice light barbecue sauce upon serving.
