Plating Mirror Glaze

This recipe has been adapted from a recipe by Chef Yann Bernard Lejard, often known as the “Culinary Picasso." Many of his culinary art pieces are inspired by Jackson Pollock, and his approach to food and plating is completely unique. For Yann, it is not just plating; it is creating and inspiring through spoon, sauce and food. The way you move your spoons or spatulas, in addition to the placement of food at the moment of plating, are what makes Yann's technique so unique.
