Soft Chocolate

While Chef Rosendale was preparing and practicing for the CMC exam, one of the tests he was required to take was nutrition. In true Rosendale fashion, Rich challenged himself to use chocolate, of all things. As most people know it (i.e., with lots of sugar), chocolate is not exactly the pinnacle of nutrition, though cocoa itself offers numerous health benefits. In this recipe, Rich ups the cocoa factor by using semi-sweet chocolate, creating a satisfying, flavorful chocolate indulgence while balancing it with other ingredients to keep the portions low in calories.
