Sous Vide Farro Risotto

Farro is a toothsome, hearty grain hailing from not one, but three different ancient wheat species: emmer, spelt and einkorn. In Italy, farro species are often distinguished as "farro grande," "farro medio," and "farro piccolo." Italians love their farro, and in the last few years, the unique grain has become increasingly popular in U.S. cuisine. Farro has been showing up on menus in myriad dishes, from grain bowls to salads to house-made veggie burgers.

This sous vide risotto is our soul-comforting spin on this versatile grain. Kombu adds a singular umami flavor during the sous vide process, while ginger infuses its warming spice, which complements the sweet, nutty flavors of the farro. It's not your typical risotto, but it's just as fun to make and eat (maybe even more so!) as the traditional Arborio rice dish. Enjoy!
