This plating technique is inspired from our time in Las Vegas in 2015, when we were working to prep for our Gala Dinner after the USA Bocuse d’Or tryouts at the Palazzo. While we were working, we also got the opportunity to watch the extremely hard competition that was going to reveal the next Team USA. While we were walking around the participants and observing how talented each one was, one of the teams led by Chef Brian Lockwood took all our attention. As he was getting ready to plate his main course, he opened one of his boxes and took out a turntable. Everyone started to wonder what it was for until he used it to plate his main course so perfectly executed. The competition was getting better and better!
Mathew Peters won the tryouts and two years later (2017) his team took home the Gold medal for first time in Team USA history at the most important culinary competition of the world, the Bocuse d’Or.
